Burger di fagioli

Burgers with legumes are always hard to make perfect, there is always something about their texture or consistency that doesn't quite work. These ones are almost perfect! Super compact, just the right consistentcy that I like - and tasty of course!

Ingredients (2 people)#

  • Red beans: 200gr
  • Onion: 1 small, or half of a big one
  • Carrot: 1 small, or half of a big one
  • Oat flakes: 2 tbsp
  • Chickpea flour: 3 tbsp
  • White miso: half tsp
  • Walnuts: 3
  • Salt and olive oil: to taste

Method#

  1. Grind the onion and carrot in a food processor first
  2. Cook them in a pan with a bit of olive oil
  3. Whilst they cook, grind the red beans in the same food processor. You don't have to mush them down completely, they need to remain in small pieces
  4. Move the beans into a bowl
  5. Melt the miso into a coffee cup with a bit of water
  6. Put the mixture of miso and water, the oat flakes and the chickpea flour in the bowl with the beans. Then add the onions and carrot that should have softened by now. And add a pinch of salt as well. Mix well
  7. Then add the walnuts cut down in small pieces with a knife. You don't have to grind them down, they need to remain in pieces. Mix it all again
  8. Create the shape of burgers with your hands, and cook them in a non-stick pan for 3-5 minutes per side. Alternatively, you can also cook them in fan over at 200 degrees celcius for 10-15 mins

And now they are ready to be eaten straight away!

Tips#

These burger are actually quite good on their own, with some mayo on top maybe, and a salad on the side. However, they are really good in a sandwich as well, with a sauce or vegan cheese, a slice of tomato and some salad.
