Burger alla pizzaiola

I am not sure where I took this recipe from, but I do it quite often; it's a nice way to cook chickpeas that is not in a soup or in a salad, and the combination of chickpeas and tomatoes reminds me of the pizza - which is why I called them "alla pizzaiola". Hope you'll like them as much as I do!

Ingredients (2 people)#

  • Chickpeas: 250-300 gr (once boiled), or you can use a can, it's more or less these grams
  • Onion: 1, medium size
  • Tomato: 1, medium size
  • Extra virgin olive oil: for sauté
  • Chickpea flour: 3 tbsp
  • Salt: 1 tsp

Method#

  1. Sauté the onion and tomato in a pan, with a bit of olive oil. Cook them for at least 10 minutes, the tomato needs to soften and release water
  2. Once that's done, add the chickpeas into a food processor, and pour the content of the pan as well. Mix well but not too much, otherwise it gets too liquid
  3. Transfer the mixture into a big bowl and add the chickpeas flour and salt, and mix manually (or with a spoon)
  4. Now wet your hands and shape the mixture into patties. Wetting your hands (or lightly oiling them) keeps a sticky batter like this one from clinging to your fingers while you shape the patties
  5. Place them on an oven tray with baking paper, and cook them in the oven on fan at 180°C for 15 minutes
  6. Once they are ready. Take them out of the oven and leave them to rest for around 10 minutes. This will ensure they are not too soft and don't break up into pieces when you eat them

Tips#

I highly recommend eating them with a bit of mayo on top. You can make your own mayo (follow the link), and actually, because this mayo is made with aquafaba from chickpeas, you can make it while the patties are cooking in the oven, without throwing anything to waste! You can eat these burgers as they are (like in the picture), or you can put them in a bun with a couple of leaves of salad, a slide of tomato and maybe some vegan cheese or mayo. Enjoy!!
