Rösti di cavolfiore

If you don't know how to cook cauliflower in a non-boring way, this recipe is great. Rösti are traditionally done with potatoes, but here we make them with cauliflower. They are very easy to make and really tasty!

Ingredients (2 people)#

  • Cauliflower: 400 g (raw, cleaned weight)
  • Onion: half, red or white
  • Curry powder: half tsp
  • Smoked paprika: half tsp
  • Olive oil and salt: for sautéing

  • Chickpea flour: 50 g

  • All-purpose white flour (00): 30 g
  • Water: 70 g
  • Extra virgin olive oil: 15 g
  • Salt: to taste

Method#

  1. Sauté the onion in a small pan, with a bit of oil and salt, the curry powder and smoked paprika. Cover with a lid, let it sauté for at least 5 minutes, until golden and fragrant
  2. Meanwhile, grate the raw cauliflower using a wide-holed grater, or a food processor - just be careful not to get the pieces too small. Then leave it there and make the batter
  3. To make the batter, in a big bowl combine the chickpea flour, white flour, water, extra virgin olive oil and salt. Whisk vigorously until smooth and well combined
  4. Transfer the cauliflower into the bowl with the batter, pour the sautéed onion and spices mixture as well, and mix well
  5. Once it's all well mixed, wet your hands, then shape the mixture into patties. Wetting your hands (or lightly oiling them) keeps a sticky batter like this one from clinging to your fingers while you shape the patties
  6. Once they are ready, cook the rösti in a pan, or bake in the oven at 200°C static setting for 25 minutes. If you cook them in the over, I recommend putting a drop of olive oil on top of each, and spreading it on the surface - it will leave them a bit golden once cooked

Ready to eat!

Tips#

I recommend eating them with a drizzle of lemon on top, and perhaps some salad on the side.
