Coronation chickpeas

This sandiwch tries to recall the "coronation chicken", but obvsiously doesn't have any chicken. Instead, we use chickpeas. I can't tell you how similar or different it is to a coronation chicken sandwich as I don't think I've ever tried one of those in my life, but I can tell you that this one is delicious!

Ingredients (2 people)#

  • Chickpeas: one can (more or less 250 gr when dried)
  • Soy or oat plain yogurt: 3-4 tbsp
  • Vegan mayonnaise: 1-2 tbsp
  • Dried sultanas: 30-40 gr
  • Curry powder: 1-2 tsp
  • Onion: 1 small, or half of a big one
  • Olive oil: 1-2 tbsp
  • Salt to taste
  • Toast bread: 4 slices each person

Method#

  1. First, soak the sultanas in water
  2. Put the olive oil in a pan, cut the onion in slides and put in the pan to fry. Low/medium flame, possibly with a lid on top so it keeps the steam inside and softens well
  3. Add the curry powder pretty much immediately after the onions, and leave to cook and season for around 10 mins, enough for the onions to soften
  4. In the meantime, put the chickpeas in a blender and blend them very roughly: they don't need to become powder but remain in little pieces
  5. Once the onions have softened, add the chickpeas and the sultanas after taking them out of the water
  6. Stir well and continue stiring for 2-3 minutes, to season everything together
  7. Put everything in a large bowl. Add the yogurt and mayonnaise and mix well
  8. Taste it, and add salt as needed
  9. Now you have your mixture ready. Put it in the sandwiches and enjoy your meal!

Tips#

I admit that I have put rough amounts for yogurt and mayonnaise. The reality is that you'll need to find the balance between yogurt and mayo based on your taste. I sometimes eat this without any mayo at all, I use just yogurt, because the vegan mayo sometimes can be a bit acidic and I don't always fancy it. So try out a bit, and see what you like!
