Coronation chickpeas
How it should look like - Now do it better!
This sandiwch tries to recall the "coronation chicken", but obvsiously doesn't have any chicken. Instead, we use chickpeas. I can't tell you how similar or different it is to a coronation chicken sandwich as I don't think I've ever tried one of those in my life, but I can tell you that this one is delicious!
Ingredients (2 people)#
- Chickpeas: one can (more or less 250 gr when dried)
- Soy or oat plain yogurt: 3-4 tbsp
- Vegan mayonnaise: 1-2 tbsp
- Dried sultanas: 30-40 gr
- Curry powder: 1-2 tsp
- Onion: 1 small, or half of a big one
- Olive oil: 1-2 tbsp
- Salt to taste
- Toast bread: 4 slices each person
Method#
- First, soak the sultanas in water
- Put the olive oil in a pan, cut the onion in slides and put in the pan to fry. Low/medium flame, possibly with a lid on top so it keeps the steam inside and softens well
- Add the curry powder pretty much immediately after the onions, and leave to cook and season for around 10 mins, enough for the onions to soften
- In the meantime, put the chickpeas in a blender and blend them very roughly: they don't need to become powder but remain in little pieces
- Once the onions have softened, add the chickpeas and the sultanas after taking them out of the water
- Stir well and continue stiring for 2-3 minutes, to season everything together
- Put everything in a large bowl. Add the yogurt and mayonnaise and mix well
- Taste it, and add salt as needed
- Now you have your mixture ready. Put it in the sandwiches and enjoy your meal!
Tips#
I admit that I have put rough amounts for yogurt and mayonnaise. The reality is that you'll need to find the balance between yogurt and mayo based on your taste. I sometimes eat this without any mayo at all, I use just yogurt, because the vegan mayo sometimes can be a bit acidic and I don't always fancy it. So try out a bit, and see what you like!
