Cotechino di Lenticchie
How it should look like - Now do it better!
This recipe is pretty simple and easy to the palate. It's an easy go-to when you don't know what to do. It looks like a salame, but it obviously tastes differently. It cooks relatively quickly in the oven and you can cut it in slices like you'd do with a salame - then enjoy it with soy sauce and some vegetables on the side.
Ingredients (2 people)#
- Green Lentils cooked: 500gr
- Sundried tomatoes: 5-6
- Oat flakes: 150gr
- Walnuts: 60gr
- Extra virgen oil: 6cl
- A pinch of salt
Method#
You'll need a powerful blender and you'll need to add one ingredient at time to make sure you won't have coarse pieces, but rather a uniform mix.

Blend the walnuts first; add the sundried tomatoes and blend; add the oat flakes and blend.

Finally add the green lentils and the salt, then blend until you get a good looking mixture

Prepare a tray with a baking paper, then put the mixture on it and wrap it with the baking paper as a salami shape.

Reopen it and spread the oil all over the surface, wrap it back again and it's ready for the oven.

Warm the oven up to 180°C with fan mode and leave it for 10 minutes.

Wait for a couple of minutes before cutting into slices, so it can thickening.
Tips#
It may feel too dry and it goes well along with soy sauce. You can try with other sauces or creams.
