How it should look like - Now do it better!
I tried to make vegan mayo a few times with different recipes, but it was never quite right, and often too liquid. But this one is SOOOO GOOD! I think I made the perfect recipe! But I admit that mayonnaise is always a bit controversial, some people like it more sour, some people like it lighter, etc... But for me, this recipe is perfect. Once you make it, if for you it is not quite right, I've got a couple of tips for you at the bottom of this page.
Ingredients (2 people)#
- Aquafaba (from chickpeas): 70 gr
- Sesame oil: 130-140 gr
- Apple vinegar: 1 tsp
- Mustard: half tsp (or 1 tsp if you like a stronger mustard flavour)
- Pinch of salt
Method#
- Pour the aquafaba and a bit of sesame oil in a tall jar. Start blending with a hand blender
- Continue to blend while pouring in the rest of the oil slowly, and then the vinegar and then the mustard
- Blend until it has thickened enough to look like mayonnaise
And it's ready, dead easy!
Tips#
There are thousands of types of mayonnaise out there, some people like it more sour, some people like it fuller or lighter... So if this recipe is not yet perfect for you, you may want to try and add a few drops of lemon, to make it a bit more sour. Or perhaps put a bit more vinegar or a bit more mustard, but not much! Try out, and I'm sure you'll find the perfect recipe for you!
