How it should look like - Now do it better!
This is not really a sophisticated or fancy recipe. It's just a combination of simple ingredients for a stunning flavour. It's one of those things that I make when I don't know what to cook, because it's super quick and easy, tasty, and also very nutritious.
Ingredients (2 people)#
- Aubergines: 1 big or 2 small ones
- Chickpeas: 240-250 gr (cooked and drained)
- Olive oil: 4 tbsp
- Tahini sauce: 2 tbsp
- Lemon juice to taste
- Salt to taste
Method#
- Start by heating 2 tbsp of olive oil in a pan (stick or non-stick, however you prefer). Cut the aubergines into small cubes (around 1 cm each) and put them into the pan to fry at medium heat
- Put a pinch of salt on the aubergines and a lid on top of the pan. Cook for around 10-15 minutes. The aubergines will absorb the oil and then start to stick to the pan, so you'll need to add a bit of water every now and then. Keep monitoring. The aubergines need to become soft
- In the meantime, prepare the tahini sauce. Put the tahini, 2 tbsp of olive oil, a little bit of water and a little bit of lemon juice into a small bowl. With the lemon, put very little, and you'll taste later if you want to add a bit more
- The tahini and the water will sit separately. Start stirring energetically until they become one and the same. Taste and adjust salt, lemon juice and/or a bit more water, depending on how liquid or thick you want it. Remember that, if you add more water, the flavour will become a bit blander, so you may need to compensate with a bit of additional salt, so taste carefully
- Then drain the chickpeas (I usually use a can). I suggest not washing them too much, as the aquafaba from the can gives them a nice flavour
- Once the aubergines are ready, put them into a bowl, add the chickpeas and toss
- Serve the aubergines and chickpeas combo in each plate. Then sprinkle the tahini sauce on top
Et voilĂ , it's ready!
Tips#
Each person can decide how much tahini sauce to put on top, and whether they want to mix it all together or eat as it is in the picture. Either ways, it's deliciously creamy and evokes those simple middle-eastern flavours.
