This lasagna is fabulous. I learnt the ragu recipe first, and I made a pasta with it. But then I thought "Why not trying a lasagna as well - surely it can't go wrong" - and in fact, it didn't!

One of the things I used to love is "scaloppine" - a dish with lean pork escalopes and a super tasty wine-flavoured sauce.

This is very simple to make and has a nice high-contrast mix of ingredients that give it a really nice taste. It's one of my favourite.

As you can imagine from the name, this dish is very similar to what in Spain would be the Tortilla de patatas, but instead of using eggs, we use chickpea flour.
