Burger perfetti
How it should look like - Now do it better!
These patties are the perfect patties to go in a bun and make the perfect burger. Of all the ones I've tried, these are the best.
Ingredients (4 people)#
- Borlotti or Rosecoco beans: 450-500 gr (once cooked), roughly 2 cans
- Pepper: 1, preferably red pepper
- Onion: 1, preferably red onion
- Oat: 60 gr
- Ground flaxseeds: 2 tbsp
- Extra virgin olive oil: to sauté
- Salt to taste
Method#
- Cut the onion into small pieces, and sauté in a pan with a bit of olive oil
- Cut the pepper into small pieces (around 1 cm each), and add them to the pan. Cover with a lid and leave it to cook for 15-20 minutes
- In the meantime, prepare the oat: grind the oats in a food processor until they turn into something close to oat flour. This will stop you ending up with little bits of oat once you add it to the rest of the mixture
- Take the oat out of the food processor and put it on the side
- Now put the beans into the food processor and add the onion and pepper in, once ready
- Add salt to taste (probably around 1 tsp), and mix everything well. It should turn into a mixture that's uniform, but not too smooth
- Transfer the mixture into a big bowl, add the "oat flour" and the ground flaxseeds, and mix well with a spoon, or with your hands
- Now wet your hands and shape the mixture into burger's patties. Wetting your hands (or lightly oiling them) keeps a sticky batter like this one from clinging to your fingers while you shape the patties. I usually prefer to use oil here instead of water on my hands
- You can now cook the patties in a non-stick pan, or in the oven. I personally prefer the oven: place the patties onto a tray with baking paper, and cook in the oven on fan at 180°C for 15 minutes
- Once they are ready, take them out of the oven and leave them to cool down for at least 10 minutes. This will ensure they are not too soft and don't break up into pieces when you eat them
Tips#
As mentioned above, I think these patties are perfect to go in a bun like a proper burger. I suggest adding a slide or two of smoked vegan cheese, a bit of mayo, a salad leaf and a slide of tomato. Et voilà! Enjoy!
