Piadina

This is a simple dish, commonly known as "wrap". You can make it with any condiment you want. I will give you a couple of suggestions - hope you like them!

Ingredients (2 people)#

  • White wheat flour: 2 portions
  • Water: 1 portion
  • Olive Oil: 1/10th of the flour
  • Salt: 1 tsp

Usually each piadina is 50 gr of flour. So following the instructions above, if you want to do 2 piadinas, you would have: - 100 gr of flour (100 gr per person, 4 piadinas in total) - 50 gr of water - 10 gr of olive oil

Method#

Whatever filling you will put, you'll need to prepare the dough for piadinas first, because it will need to rest for 20-30 minutes.

  1. Make the dough with all the ingredients, kneading everything together. If you have a bread machine, put all ingredients inside and put the kneading programme on
  2. Create as many balls as the number of wraps you want to make.
  3. Let it rest for 20-30 minutes
  4. Then prepare the piadina shape for each ball with a rolling pin, and cook in a non-stick pan. It depends on how non-stick your pan is, you can add a drop of oil just before placing the piadina, but it shouldn't be needed.

Suggestions for the filling#

1) Peppers and hummus#

  • 4 medium size bell peppers
  • 2 big onions
  • See ingredients for hummus HERE

  • Cut the peppers and onions in slices

  • Put a couple of TBSP of olive oil in a pan (stick or non-stick, as you prefer) and cook them with a lid on top, until tender. It usually takes at least 30-40 minutes.
  • In the meantime, prepare the hummus.
  • Then serve with hummus spread inside and peppers and onions filling.

It's a very simple recipe, but I find that peppers and hummus are a really good match!

2) Avocado and black beans#

  • 2 medium/big avocados (or more if they are small)
  • Half a lime
  • Black beans (cooked): 250-300 gr, which is usually one can
  • Paprika: 1 full tsp
  • Salt and oil to taste

  • Pour the black beans into a pan (stick or non-stick). If you're using beans in can, cook them with some of liquid, I find that gives them a fuller taste

  • Add a tsp of paprika and let them cook at low flame
  • In the meantime, prepare the avocado sauce: peel the avocados and put the in a blender. Squeeze in half a lime (or lemon, if you don't have lime), and a tiny pintch of salt.
  • After 5-10 mins, the beans and the avocado sauce will be ready and you can serve. Spread the avocado sauce inside and add the black beans, then wrap it up and eat it!
