Biscuits
How it should look like - Now do it better!
These are very simple plain biscuits, that I started making quite regularly mainly because I got irritated that the biscuits and cookies at the supermarket - albeit vegan - are packed in unrecyclable plastic, most of the times. So I thought, if I make my own, there is no plastic involved! And as I said, I've started making them quite regularly now because it only takes 10 minutes to make them, 15-20 mins to cook them in the oven - and it's done. Easy!
I make them plain because I like to eat them with jam or peanut butter on top, but you can put chocolate flakes or similar things on top, before putting them in the oven, if you want them with any particular flavour.
Ingredients (20-25 biscuits)#
- Plain white flower (not strong): 180 gr
- Sugar: 30-40 gr
- Sunflower oil: 50 gr
- Oat milk: 60 gr - You can use another plant-based milk as well, but bear in mind that if you use something with strong flavour like almond or coconut, that might give some additional taste to the biscuits
- Baking powder: half a tsp
Method#
- Put the flour, baking powder and sugar in a bowl, and mix well. A big spoon is fine, you don't need a whisk
- Add the oil and milk, and continue mixing. At this point, the dough will start to become quite solid so you can start to use your hands instead
- Once mixed well, roll out the dough and stretch it with a rolling pin until it's around 2-3 mm thick
- Get a glass or something rounded to create the shapes of the biscuits on your dough
- Put your biscuits' shapes on a baking tray with baking paper, and cook in the over (static baking possibly, not fan) at 180 degree celcius for 15 mins (or 20-25 mins, depending on your oven. Mine is a killer, so 15 mins is enough)
- You can enjoy them warm, or you can keep them for up to a week and eat them when you fancy!
