This recipe looks awful in the picture, but is incredibly delicious. It's a winter comfort food, full of flavour and high nutrients, and it's incredibly simple to make. It's also a really good way to eat the savoy cabbage, which is a typical winter vegetable which I would like to eat more of, but I often lack ideas on how to cook it. The savoy cabbage is rich in fibre, minerals and anti-inflammatory compounds - we should all eat more of it, and this recipe is a nice, simple and tasty way of eating it.

Ingredients (2 people)#

  • Savoy cabbage: 1 small, or half of a big one
  • Borlotti beans: 1 can (circa 240-260 gr drained)
  • Garlic: 2 cloves
  • Tomato passata: 200 gr
  • Water: 100 gr
  • Olive oil, rosemary and sage: to taste

Method#

  1. Cut the savoy cabbage in strips a wash it well
  2. Prepare a large pot. Add a couple of tbsp of olive oil and 1 clove of garlic pressed and chopped
  3. Let the garlic release the aroma for a couple of minutes, then add the strips of cabbage and the water. Put a lid on top and let it cook for about 25 minutes
  4. After 15 minutes, add the tomato passata and the beans to the pot, and stir well. Then leave there to cook for the remaining 10 minutes
  5. In the meantime, prepare a small pot with a 5-6 tbsp of olive oil, 1 clove of garlic pressed, a bit of rosemary and sage, and cook on low flame. We just want the oil to absorb the aroma from the garlic and herbs
  6. Once the 25 minutes have passed, take the main pot off the flame and blend the mixture of cabbage and beans with an immersion blender, until you get a smooth texture
  7. Turn off the heat on the other small pot as well, and take out the garlic and herbs from the oil
  8. Serve the soup with drizzles of the aromatic olive oil on top

Tips#

I suggest serving with bread as well. I usually season a few slices of bread with olive oil, salt and herbs mix or rosemary, and I toast it in the oven for 5 minutes. Then I serve it with the soup. As I said, incredibly simple, and delicious. Enjoy!
