Scaloppine al vino bianco
How it should look like - Now do it better!
One of the things I used to love is "scaloppine" - a dish with lean pork escalopes and a super tasty wine-flavoured sauce. Then I realised I can make exactly the same thing with tofu - equally tasty, because what gives the taste to this dish is the wine sauce, not the "protein" in it. And it's super simple to make: few ingredients and quick process.
Ingredients (2 people)#
- Tofu: 250-300 gr
- White wine: 200-250 gr
- White wheat flour (not strong)
- Olive oil
- Salt to taste
Method#
- Cut the tofu in slices, they should look squared
- Prepare a plate with a bit of flour in it, and rub both sides of each tofu slice in the flour. Press well so that the flour sticks on it
- Heat up a couple of TBSP of olive oil in a non-stick pan
- Add all the tofu slices in the pan, positioning them carefully one at a time
- Fry each side until it starts to stick to the pan
- Add the white wine and leave on low flame for 3-5 minutes, watching that the sauce thickens
- Sprinkle a bit of salt on top
- Once the sauce seems thick enough for you, your meal is ready!
Tips#
You can eat it alongside any vegetables. I usually like it with some salad on the side, or a smashed potatoes purée, which also goes quite nicely with it, as you can mix it up with the wine sauce.
