Scrambled Tofu
How it should look like - Now do it better!
This is the "substitute" for scrambled eggs. It doesn't taste the same as eggs, but it has the same features: it's quick to make, it's high in protein, it's delicious, and...it's yellow!
Ingredients (2 people)#
- Tofu: 280-300 gr
- Vegetable milk (soy or oat are best): enough
- Tumeric: 2 tsp
- Paprika: 1 tsp
- Sunflower oil (or similar): 4 tbsp or enough to cover the whole surface of your pan
- Salt to taste
Method#
- Put the seed oil in a pan and warm it up
- While the oil is heating, crumble the tofu with your hands and put it in the pan with oil
- Let it cook/fry a little until it has absorbed a little oil
- At this point, pour in the vegetable milk, enough to just cover a little bit the tofu in the pan - and then raise the heat/flame of your hub a bit
- Add turmeric, paprika and a bit of salt
- Let it cook until the milk has dried out and it looks like a scrambled eggs. It should take 10 mins, not much. And it's ready!
Tips#
You can eat it with anything on the side, just like you would do with scrambled eggs. But if you eat it for brunch, I would highly recommend eating it with smashed avocado on toast!
