Mix di patate dolci

This recipe is a bit of a random mix of ingredients, but the combination of flavours is lovely, and it's just a simple option when you've got sweet potatoes and you don't know what to eat them with.

Ingredients (2 people)#

  • Sweet potatoes: 2-3 medium size ones (but you can have as many or as little as you want really)
  • Sunflower oil: 2 tbsp
  • Black beans: 1 can (buy the can of beans in salted water, not in a sauce)
  • Smoked paprika: 2 tsp
  • Vegan greek yogurt: 180 gr
  • Olive oil: 1 tbsp
  • Fresh thyme: a batch of leaves
  • Herb mix, grounded garlic and salt: to taste

Method#

  1. Start by peeling the potatoes, cut them in small cubes of around 2-3 cm each
  2. Put them in a bowl, add the sunflower oil and salt to taste. Mix it up well and then transfer them on an oven tray with baking paper
  3. Cook at 200 degrees (celsius) for around 30 minutes, with fan. The cooking time could vary depending on how powerful your oven is
  4. Whilst they cook, prepare the yogurt sauce and cook the beans
  5. For the yogurt sauce, mix all the following ingredients in a small bowl: yogurt, olive oil, thyme, herbs, ground garlic and salt
  6. For the beans, drain them, but I suggest keeping a bit of the water as it gives them a nice flavour. Put them in a small pan without any oil, add the smoked paprika and cook them for around 5 minutes
  7. When everything is ready, serve in a plate

Tips#

For serving, you can keep each part (potatoes, yogurt and beans) separate, or you can mix potatoes and beans together and then drizzle the yogurt on top. This is not something I would offer to my guests perhaps, as it's too simple and not the most fancy thing to present. However, as I said earlier, the combination of flavours here is super, and it's a nice simple dish to prepare when you don't know what to do!
