Chilli vegano
How it should look like - Now do it better!
One of the first dishes to give up meat should be things like curries and chillis, in my option. Because they are so rich in flavour that meat in it doesn't really add any flavour, it all comes from the spices. So why having a dead animal's body in it when you can enjoy a great dish without them? This chilli recipe is an example, and the lentils should give you a similar texture (and protein) as meat. It goes nicely with sweet potatoes, rice, and/or a fresh plain yogurt, but those are optional.
Ingredients (4 people)#
- Onion: 1 medium size
- Cumin: 1 tsp
- Chilli flakes: 1 tsp
- Paprika (not smoked): 1 tsp
- Green lentils (cooked): 500 gr (or 2 cans)
- Red kidney beans (cooked): 250 gr (or 1 can)
- Tomatoes passata: 1 bottle (roughly 700 gr)
- Peppers (red or yellow are the best, but you can use any type): 3-4 medium size
- Extra-vergin olive oil: 3-4 tbsp
- Salt to taste
Method#
- Put the olive oil into a big pot and saute the onion with the spices into it
- In the meantime, cut the peppers into slides, and then add them into the pot
- Put a lid on top of the pot, lower the flame/temperature of the hub and leave it to cook for 20-30 minutes to wilt the peppers
- When the peppers have wilted, add the legumes in it (lentils and red beans)
- When the lentils begin to fall apart (roughly another 20 mins), add the tomato sauce and stir. The idea is that the lentils give a bit of texture similar to minced meat.
- Leave it there to cook on low flames until the sauce has evaporated and thickened a bit - depends how much liquid you want it to be.
- Then add salt to taste and...it's ready!
Tips#
I recommend eating it with:
- Sweet potatoes, just cut them into pieces and roast them in the oven until tender. I usually just add a bit of oil and salt on them, nothing else. If you do this, I suggest doing it after you've added the peppers into the chilli, as you have a bit of spare time before the next step
- Vegan yogurt, usually I use coconut or greek plain vegan yogurt.
